Notes: Around 1889, George Hildebrecht purchased – and renamed – a restaurant at 25-27 E. Hanover Street in Trenton that had been in operation since 1847. At the time of George's death in 1903, his son Charles F. Hildebrecht took over management of the cafe.  The Hanover Street building was sold in February 1904, but Charles continued to manage it.

By 1905, Charles was also operating the Hildebrecht Catering Company, which was located at 19 W. State Street. A 1910 advertisement lists the "Lunch-room" on West Hanover, and the Dining Rooms at 19-21 W. State St. By this time the company was making Hildebrecht's Ice Cream, and Hildebrecht's Candy. It was around this time that Hildebrecht's was also advertising itself as "The Resort of the Particular."

In 1914 Hildebrecht's Dairy Lunch was also in operation at 148 E. State Street. A December 1920 ad promoted a special 60¢ luncheon at the 19 W. State Street restaurant.

A story in the May 20, 1928, issue of The Times in Trenton (shown above) said that bids would be received "July 1 for the construction of eight stories to the Hildebrecht Restaurant, West State Street and Chancery Lane. It is the intention of Charles F. Hildebrecht, owner of the restaurant, to make a modern hotel of 216 rooms, with a ballroom and banquet hall for the accommodation of 500 persons, and automobile storage for the guests." Walter Hankin, architect, had been hired to plan the hotel. The hotel opened on time in early 1929.

The hotel closed in 1980, the building was boarded up and demolished in 1984.

Maddock Pottery produced china that is crested "Hildebrecht's" in green script lettering with a return swash. The green decal border is Maddock's #5000 Shoreham pattern.

S. E. Kaufman was the supplier. A Trenton department store, it was founded in 1885. In 1920, it was sold, and in December 1921 the name was changed to Swern's.
